I just finished this today and it was really a lot of work. :)
A few tips below. I am an Alliance player.

One fish I had a hard time finding was the Deepsea Monsterbelly. The best place I found for them was off the SE coast of Borean Tundra at the second set of icebergs. Nothing dangerous in the water, just a lot of swimming. I would recommend waterwalking potions as you can't reach some pools. I just couldn't find a place to jump up on the steep iceberg. Some pools are accessible by standing on a floating iceberg. I used waterwalking so it wasn't a problem for me. You'll find the pools of Moonglow Cuttlefish here too.
I also used waterwalking when getting the Needlefish from Sholazar Basin. I went to the road to the right after entering and got mine from the first little lake.There are lots of waspy things flying around the edges so I just walked out to the middle.There are also some wandering pats of bugs on the road that will try to kill you :)
I chose to go to Lake Indu'le for my Dragonfin pool. If you enter the wrong way following the road like I did, you will aggro many angry peeps. In addition, the water contains hostile water elementals. I am a prot warrior with about 17k health so I just swam out of range the best I could and survived. I jumped up on a rock to health up. Standing near the pools were hostile fisherman NPCs. Again, waterwalking was nice to have so you dont' have to get too close to the shore. You still have to watch out for the underwater elementals. I would travel to the NE corner of the lake. You will also find some pats on the road around the lake. You have other choices for this pool that you may want to investigate.
The rest of the fish were pretty straightforward and I just explored and put my fish finder on and picked up flight paths along the way. I did jump down a few gorges for fish and swam around a lot because I couldn't get back up the cliffs. But it was fun.
I didn't die at all in my ventures and I got to travel around a lot. I usually just fished up one fish from the pool and was on my way. I'm maxxed out on my cooking until I can get to Dalaran so I just stuck most of them in the bank.
